Vanilla Almond Gluten Free Granola

This is an award-winning family recipe that we have enjoyed for years. It is simply amazing and has the best flavors, in addition to being gluten-free.

Ingredients

  • 4 cups of old-fashioned oats be sure to use certified gluten-free oats
  • 1 cup of sliced almonds
  • 1/2 cup of brown sugar
  • One teaspoon of cinnamon
  • 1/4 teaspoon of salt
  • 1/3 cup of Canola Oil
  • Canola oil spray
  • 1/4 cup of organic honey
  • 2 tablespoons of white sugar
  • 4 teaspoons of vanilla extract
  • Almond Extract If you want a tad bit more almond flavor, you can use half vanilla and half almond flavoring

Instructions

  • Preheat oven to 325 degrees.
  • In a large mixing bowl, combine the dry ingredients with oats, brown sugar, sliced almonds, cinnamon, and salt and set aside.
  • Mix the wet ingredients in a small saucepan. Canola oil, honey, and white sugar in a medium saucepan. Bring to a boil. Remove from the heat and add the vanilla extract.
  • Combine the oats mixture with the wet mixture and stir well.
  • Spray a baking sheet with cooking spray.
  • Spread the granola mixture in an even layer on the prepared sheet pan. (I like using a large baking sheet so the mixture is thin and not piled on the tray).
  • Bake in the oven at 325 degrees for 30 minutes until golden brown.
  • Be sure to turn the granola every ten minutes or your granola may burn.
  • Bring the granola to room temperature using the tips below and store it in an airtight container.
